Introducing the 2025 Acres U.S.A. On-Farm Intensive: An exclusive opportunity tailored for farmers, growers, landowners and food enthusiasts seeking to unlock their land and food's full potential. Join host Taylor Henry, the owner and CEO of Acres U.S.A for a full day of learning set on a grass fed beef farm in Viroqua, Wisconsin.

The Cattle Management Intensive is a one-day, in-person event designed for graziers, ranchers, and regenerative livestock producers who want to deepen their understanding of holistic cattle care. Held on July 11, 2025, in Viroqua, Wisconsin, this intensive brings together three of the most respected voices in the field — Dr. Will Winter, Steve Campbell, and Gary Zimmer — to share practical insights on animal fertility, mineralization, soil biology, grazing strategies, and low-input cattle genetics.

Attendees will walk away with actionable knowledge to improve herd health, align livestock systems with natural principles, and build more profitable and resilient operations. Plus, enjoy a farm tour on site.

Viroqua Speakers

Gary Zimmer

​Gary Zimmer is a pioneering voice in regenerative agriculture and a leading authority on biological farming systems. Raised on a dairy farm in northeastern Wisconsin, he holds a bachelor’s degree from the University of Wisconsin–Madison and a master’s degree in dairy nutrition from the University of Hawaii.

His early work in dairy nutrition led him to explore the deep connections between soil health, forage quality, and livestock performance. This journey inspired him to co-found Midwestern BioAg in the early 1980s, a company dedicated to improving farm profitability through soil mineral balancing and biological farming practices.

Zimmer is also the author of The Biological Farmer and Advancing Biological Farming, and he operates Otter Creek Organic Farm, a 1,000-acre certified organic farm near Lone Rock, Wisconsin. His work emphasizes the importance of mineralized, high-quality forages in dairy nutrition and the role of healthy soils in sustainable livestock production.

Will Winter

Dr. Will Winter is a holistic veterinarian, author, and regenerative agriculture advocate with over four decades of experience in animal health and sustainable livestock systems.

After earning his veterinary degree from Kansas State University in 1975, he pursued advanced studies in animal nutrition and veterinary toxicology.

He later founded one of the largest holistic veterinary practices in the U.S., integrating homeopathy, herbal medicine, chiropractic care, and animal behavior.

A co-founder of the American Holistic Veterinary Medical Association, Dr. Winter is also the author of The Holistic Veterinary Handbook and a longtime contributor to eco-agriculture publications.

Since retiring from clinical practice in 1999, he has focused on education, consulting, and promoting nutrient-dense, pasture-based livestock systems.

He currently serves as herd consultant for Thousand Hills Cattle Company, leads the American Holistic Livestock Association, and operates Lucky Pig Farms, where he raises pastured Berkshire hogs and manages invasive species with sheep and goats.

Steve Campbell

​Steve Campbell is a lifelong cattleman and regenerative livestock consultant based in Idaho. With decades of hands-on experience, Steve specializes in helping producers improve herd fertility, efficiency, and profitability through practical, low-cost strategies rooted in soil health, mineral balancing, and genetic and epigenetic selection. He is known for teaching producers how to "see" quality beef on the hoof and for his signature concept of the "Red Solo Cup Cow"—a visual framework for identifying low-maintenance, high-fertility animals. Steve has spoken at leading conferences including Acres U.S.A., GrassWorks, and the National Grazing Lands Conference, and offers on-farm consultations across North America. His approach blends old-school stockmanship with modern insights into animal observation, mineralization, and regenerative grazing systems

Taylor Henry

Taylor Henry is an Entrepreneur and Realtor in the Driftless Region. He acquired Acres U.S.A. in December '23.

He has a lifelong obsession with land, which he has turned into his career. He farms a 60-acre regenerative operation with cattle, hogs, chickens, and his two dogs, Bow and Remi. His farm, which includes an Airbnb, is an experimental blend of modern agriculture and recreational land management.

Mentored by Mark Shepard, Taylor has honed his expertise in land management. He founded "1080 Outdoors" to help landowners enhance their properties for recreational use. Taylor has provided consulting and management plans to numerous clients, both onsite and virtually.

Before becoming an entrepreneur, Taylor served as a County Sheriff in La Crosse, Vernon, and Crawford Counties. His goal is to help like-minded individuals acquire and manage land, believing it is best preserved by conservationists, farmers, and outdoor enthusiasts. Taylor is known for his deep land knowledge and commitment to honesty, integrity, and client care.

For Eco-Ag U all-day workshops: Due to limited space, cancellations received through November 1st, 2024 are entitled to an 80% credit to be applied to AcresUSA subscriptions, books, DVDs, audio CDs, or future conference fees.
